I found Utley's short game (excluding putting) book pretty good. I have been following it for about 3-4 years now and I find it to be pretty reliable. On my wedges I try to find the most bounce that I can because it helps to prevent the layover the sod move. His trick to bunker shots works like a charm. I am not sure why but when I do it as he states I have had decent success. That being said for the caliber of golfer I am I am wildly inconsistent out of the sand.
I have recently tried using the rule of 12 and I am in love. I have found however that it is not a great system on courses with really small greens because the pin is rarely more than 2:1 away from you. My club has very small greens so I rarely get a chance to implement it much. But during my annual Palm Desert trip it was awesome and worked great.
I have watched Phil's video and I think it is a good video if you know the fundamentals of a proper release. Without it I think many a chunk is in your future.

gmbtempe and richi, your point is noted, that he was merely explaining and demonstrating how to use the bounce. perhaps that clip was taken out of context in that he might have told the crowd when to hold and finish with what clubs...
Overall, my impression has been that the biggest obstacle for someone learning to reliably chip is in fact this tendency to "release" and not the inability to "release".
As much as i appreciate him showing that one should consider "releasing" to max the benefit of the bounce, I would like to hear a quick reminder when not to use that technique. To me that will be more complete.
Keep in mind of this: you people have been immersed in golf knowledge for some time so your perspectives may be more intuitive. An average golf student needs more clear guidance, that is all I am saying.
